Vada pav is an Indian vegetarian fast food, consisting of potato fritter sandwiched between Indian bun(pav)

Preparation time: 20 mins
Cooking time: 20 mins
Makes about 12-13 Vadas(Potato Fritter)

Filling :
  • Potato: 4
  • Green chilly: 2
  • Chopped Ginger: 1/2 tbsp
  • Curry leaves(chopped): 1/2 tbsp
  • Salt: 1 tbsp ( according to taste)
  • Cumin seeds: 1/2 tbsp
  • Chilly powder: 1/2 tsp
  • Turmeric powder: 1/2 tsp
  • Oil: 1 tsp
  • Gram flour/Chic pea flour/Besan: 1 cup
  • Salt: 1 tsp
  • Chilly powder: 1/2 tsp ( optional)
  • Water
  • Oil for deep frying.
  • Dry Garlic chutney
  • Coriander chutney (optional)
  • Mint chutney(optional)
  • Pav (Indian bun): 12-13
  • Finely chop ginger, curry leaves and green chilies. Clean and boil potatoes. After its cooked , dip it in cool water, its easy to remove the skin that way. Then mash it.
  • Add salt and chilly powder.
  • Take a small pan, add 1 tsp oil and fry cumin seeds,ginger, green chilies and curry leaves. Add this to mashed potatoes.
  • Mix it properly.

    To make the coating:
  • Prepare batter by mixing 1 cup of  gram flour, salt, chilly powder and 1/2 cup water( adjust accordingly, batter should have medium consistency )
  • Heat oil in a pan.
  • Make small balls out of mashed potatoes, dip it in the batter so that it coats evenly, deep fry in hot oil till it turns brown. 
  • Turn it and fry for some more time.
  • Drain it onto an absorbent paper and keep aside.
  • Slice the pav, such that it is open from only one side.
  • Add some dry garlic chutney, coriander and mint chutney.
  • Place one vada in each pav and serve hot.
