Paneer Pulao / Cottage cheese Pilaf is a delicious blend of rice with spices and cottage cheese , this recipe makes me drool whenever I think about it .
Preparation:
Rice : 1 cup ( basmati preferred )
Cottage cheese ( paneer):200 grams
Green Peas: 1/4 cup
Onion : 1 small
Garlic: 2-3 cloves
Chilli powder : 1 tsp
Coriander seeds( or powder): 1 tbsp
Cumin seeds : 1/2 tsp
Oil - 3 tbsp
Salt - to taste
Turmeric powder - 1/2 tsp
Preparation:
- Rinse rice and then soak it in 2 cups of water for about 1 hr
- Crush the whole coriander seeds and keep it aside ( coriander powder can also be used )
- Cut onion into small slices and garlic into small pieces, keep it aside.
- Cut cottage cheese into small square pieces. Take a pan and fry cottage cheese( paneer ) in little oil till it turns slight brown .
Method:
- In a pressure cooker add oil and heat it , then add cumin seeds and once it starts to splutter add onion and sauté it till it turns soft and slight brown , then add chopped garlic .
- After that add chilli powder , coriander powder and turmeric powder and mix it .
- Now add green peas ( or other mixed veggies) and mix it .
- Now drain the water from rice and add rice to the pressure cooker , followed by 2 cups of water , add salt according to taste ( approx 2 tsp ), close the pressure cooker lid and allow it to cook ( 2-3 whistles ).
- Turn off the pressure cooker and carefully open the lid once all the steam has escaped , then add fried paneer cubes and mix it .
- Serve it , Paneer Pulao is Ready.
