Chilli paneer is my favorite among Vegetarian Indian chinese Recipes

Ingredients :

Oil : 2-3 tbsp
Paneer( Cottage Cheese) : 200 gms
Green chilly : 3-4 ( sliced )
Onion : 2 small ( sliced )
Chopped ginger : 1/2 tbsp
Garlic : 4 flakes ( chopped )
Spring onions chopped : 1/2 cup
Soya sauce : 1 tbsp
Red chilly sauce : 2 tbsp
Corn flour : 1 and 1/2 tbsp
Water : 1/2 cup
Salt : to taste

Marination : 
Corn flour : 1 tbsp
Maida( All purpose flour) : 2 tbsp
Salt : to taste
Ginger garlic paste : 1 tbsp
Chilly powder : 1 tbsp
Water : 2 tbsp


Preparation : 
Cut paneer in to small cubes.
Mix all the ingredients under marination.
Then add the paneer cubes in to the marinade
 and keep for 1/2 n hour.
Mix 1 and 1/2 tbsp of corn flour
 in half cup water, and keep it ready.

Method :

  • Fry paneer : Heat very little oil in a non stick pan. Fry the marinated( coated paneer ) till the coating turns brownish red. Or deep fry the paneer.
  • Remove from pan and keep it aside.
  • In a pan heat oil( 2- 3 tbsp) .
  • Once the oil is hot , add onion and saute it until it becomes brown and soft.
  • Add chopped ginger and garlic saute it for few seconds.
  • Then add green chillies and spring onion. Saute for less than a minute.
  • Add soya sauce and red chilly sauce, mix it.
  • Add corn flour mixed it water*
  • Mix it well. Add salt.
  • Then add fried paneer. Saute it until all paneer gets equally coated.
Note : *Adding corn flour with water is optional. You can skip this step to get dry paneer chilly.

  4. This is one of my favourites. I make a few tweaks to this simple recipe while cooking. First i rinse cottage cheese (diced into 1cm cubes) in hot water and allow it to stand for 2-3 mins, then drain all the water. This makes the cottage cheese softer and probably makes it absorb less of fat/oil when it is deep fried. Once water is drained, take out the soft paneer cubes and continue with the regular marination. I also add about 1/2tsp of sugar icing to the dish along with the salt. Rest of the recipe is same. For those who want to make this dish within 15 mins, first shallow fry those (hot water soaked & drained) cheese cubes in abt 2tsp oil, fry on medium flame til it slightly turns yellowish and keep it aside. In another pan, heat 2-3tsp oil. Add chopped onions, garlic & chillies, allow it to cook for a minute, or till the onions turn slightly translucent then add ginger garlic paste. Saute for a few seconds. Add the sauces (red chilli sauce can be substituted by chilli or paprika powder). Add salt and 1/2tsp iced sugar. Mix 2 tsp each of all purpose flour & corn flour with 75ml of water, make sure there are no flour granules by gently mixing the flour water is being added. Add this flour mixture to the pan gently by mixing slowly. Let it cook for about 5 mins, n then add the cheese cubes prepared earlier. Let it saute for 2mins, when you can see the oil slightly floating over the broth, add spring onions, cook for few seconds with lid covered over the pan.

    1. Those who prefer crispy paneer pieces, can just add shallow fried paneer ahead of the flour mixture, cook till paneer turns golden and then add chopped spring onions and about 50 ml of flour mixture in the end, let it saute for a few mins and serve hot.
