Ingredients :


Eggplant : 2 large / 4 small
Cooked Green Peas : 1/2 cup
Oil : 2 tbsp
Butter : 1 1/2 tbsp
Onion : 1 Large
Tomato : 1
Cumin seeds : 2 tsp
Chopped ginger : 1/2 tbsp
Chopped Garlic : 1/2 tbsp
Chilly powder : 2 tsp
Turmeric powder : 1/2 tsp
Green Chilly : 1
Almond Paste : 1 tbsp ( you can also use cashew paste )
Salt : to taste
Garam Masala : 11/2 tsp
Heavy Cream : 1 tbsp
Sugar : 1 tsp
Coriander leaves : For garnishing

Preparation :

  • Apply oil to eggplants and then pierce it using knife to make few holes in it. Then bake it in oven till it gets cooked at 350 F.Cook until it becomes soft. It took about 45 mins for large egg plant.Once its done, take it out , peel the skin and chop it in to small pieces.
  • Finely chop onions, tomatoes, green chilly, coriander leaves.
  • Cook 1/2 cup of green peas and keep it ready


Method :

  • In a Wok ,add oil and heat it. Add butter to it and let it melt
  • Then add cumin seeds. 
  • When the cumin seeds starts to burst, add 1/2 tbsp each of chopped ginger and garlic.
  • Add chopped onions. Saute till onion becomes slight brown in color.
  • Add chopped tomatoes and green chilly . Saute it for about 3 mins till it gets cooked.
  • Then add chilly powder and turmeric powder. Mix it.
  • Add green peas and add chopped egg plants .Mix and Cook for about 2 mins.
  • Add Almond paste, Salt, Garam Masala and mix.
  • Now add Heavy cream and sugar. Stir.
  • Once done garnish with coriander leaves.
