Preparation time: 30 mins
Refrigerate: at least 2 hours
Serves: 10-15
  • Milk: 1 1/2 cup
  • Sugar: 3/4 cup
  • Gelatin: 1 1/2 tbsp
  • Pineapple chunks: 1 cup
  • Pineapple juice: 1 cup( see notes below)
  • Fresh Cream: 1 cup
  • Vanilla Custard Powder:1 tbsp
  • Pineapple essence: 2-3 drops

  • First let us prepare custard. Mix 1tbsp of custard powder to 1/2 cup of milk. Mix it such that no clumps remain. Keep aside.
  • Take 1 cup pineapple water in a wide bowl, sprinkle 1 1/2 tbsp of gelatin and let it rest for 5 mins. Then heat it in microwave for 10-20 seconds (it becomes clear). Allow it to cool.
    (Heating method: Refer notes below)
  • Heat 1 cup milk in a bowl , add 3/4 cup sugar to it , mix. When milk simmers, add custard which we prepared . Mix well. Allow it to cool for sometime.
  • Once its cool, Mix custard and gelatin. Then add fresh cream, pineapple chunks and essence. Mix well.
    You can use blender to mix the ingredients, just 1 pulse.
  • Pour the contents in to bowl or any dish and allow it to settle. Refrigerate it.
  • Serve after 2 hours.
  • I used canned pineapple which is available in the stores. Each can has pineapple chunks or slices with pineapple juice inside it. I used the same juice which I mentioned above as pineapple juice.
  • If you are heating gelatin in a microwave,  put pineapple juice and gelatin in a microwave safe bowl and heat for 10-20 seconds.
  • If you are heating it on stove top, then place a big vessel filled with water, then place a small bowl containing gelatin and pineapple water inside the big vessel and heat till you get clear juice.
  • When using a blender, just do it in pulse for about 1 second. If you over do, you wont get any pineapple pieces when you eat.
