Preparation time: 20 mins
Marination: at least 30 mins
Cooking time: 45 mins

  • Soya sauce : 1 tsp
  • Salt

  • Coriander seeds : 1 tbsp
  • Tamarind syrup : 1 tsp
  • Red Kashmiri chilly : 7-8 ( less or more based on spice level)
  • Cumin seeds : 1tsp
  • Fennel seeds : 1tsp
For Marination:
  • Kashmiri chilly powder : 1 tsp
  • Cumin powder : 1 tsp
  • Coriander powder : 1 tsp
  • Garam masala : 1 tsp
  • Turmeric powder : 1/2 tsp
  • Salt : 1 tsp
  • Ginger garlic paste : 1 tbsp
  • Corn flour : 2 tbsp

(* If you any kebab or chicken fry mix from store, can use that to make things easier)
  • Heat a pan, dry roast coriander seeds, cumin seeds, fennel seeds & red chillies. Allow it to cool, then put it in a mixer, add a little water(around 1/2cup or lesser) let soak for a minute and grind it to a paste ( need not be very fine )
  • Mix all the ingredients under marination, then add chicken to it. See that the marinade coats the chicken well and marinate it for at least 1/2 hour and then deep fry it and keep aside.

  • Take a wok, add 2-3 tbsp ghee & when its hot add sliced onions. Fry it till it becomes golden brown.
  • Add cashew nuts fry it then add curry leaves and dry grapes.
  • After that add whole red chillies (2-4) and saute it till its fried.
  • Add the chilly paste we prepared, Mix it. Fry it till the raw smell disappears
(around 5-6 mins with mixing as needed and little water if needed)
  • Then add tomato ketchup, soya sauce & salt to taste.
  • Cook for few mins (1-2 mins)
  • Then add fried chicken. Mix well. Just saute for a minute or 2 and take off the flame.
  • Uruval chicken is ready to serve.
