
Marination: at least 30 mins
Cooking time: 45 mins
Serves: 5-6
Ingredients:
- Chicken :1 kg
- Onion thin sliced : 1 cup
- Ghee : 2-3 tbsp
- Cashew nut : 1/2 cup
- Dry grapes : if you like
- Curry leaves : handful
- Red chillies : 2-4
- Tomato ketchup : 3 tbsp
- Soya sauce : 1 tsp
- Salt
- Oil for deep frying
For chilly paste:
- Coriander seeds : 1 tbsp
- Tamarind syrup : 1 tsp
- Red Kashmiri chilly : 7-8 ( less or more based on spice level)
- Cumin seeds : 1tsp
- Fennel seeds : 1tsp
For Marination:
- Kashmiri chilly powder : 1 tsp
- Cumin powder : 1 tsp
- Coriander powder : 1 tsp
- Garam masala : 1 tsp
- Turmeric powder : 1/2 tsp
- Salt : 1 tsp
- Ginger garlic paste : 1 tbsp
- Corn flour : 2 tbsp
- All purpose flour : 2 tbsp
- Egg : 1
- Vinegar/Lemon juice : 1 tbsp
(* If you any kebab or chicken fry mix from store, can use that to make things easier)
Preparation:
- Heat a pan, dry roast coriander seeds, cumin seeds, fennel seeds & red chillies. Allow it to cool, then put it in a mixer, add a little water(around 1/2cup or lesser) let soak for a minute and grind it to a paste ( need not be very fine )
- Mix all the ingredients under marination, then add chicken to it. See that the marinade coats the chicken well and marinate it for at least 1/2 hour and then deep fry it and keep aside.

Method:- Take a wok, add 2-3 tbsp ghee & when its hot add sliced onions. Fry it till it becomes golden brown.
- Add cashew nuts fry it then add curry leaves and dry grapes.
- After that add whole red chillies (2-4) and saute it till its fried.
- Add the chilly paste we prepared, Mix it. Fry it till the raw smell disappears
(around 5-6 mins with mixing as needed and little water if needed) - Then add tomato ketchup, soya sauce & salt to taste.
- Cook for few mins (1-2 mins)
- Then add fried chicken. Mix well. Just saute for a minute or 2 and take off the flame.
- Uruval chicken is ready to serve.
