Carrot Halwa also known as Gajar Ka Halwa, is a dessert pudding prepared throughout India, however the origin of this dish is from state of Punjab. Its prepared in India during most of the festivals.
Its easy to prepare, but grating & cooking takes little long time.

INGREDIENTS:
5 tbsp ghee (divided)
6 cups of grated carrots
1 cup sugar
2 cups milk
1/2 cup dry fruits

METHOD:
- Grate carrot and keep it aside (you can also use blender to make small chunks but grating gives better results).
- Take a pan, add 4 tbsp ghee and heat it. Add grated carrot and fry for 5-7 mins. Then add 1 cup of sugar and 2 cups of milk. (Adjust sugar according to your taste)
- Allow the carrot to boil in the milk. Boil and keep stirring till liquid evaporates. It takes about 15-20 mins.
- In a separate pan add 1 tbsp ghee and heat dry fruits of your choice.
- Add dry fruits to the carrot and mix.
- Carrot Halwa is ready to serve.
